It is that time of the year cold outside and Halloween is round in the corner, so why not take advantage & enjoy the season poplar vegetable( pumpkin) making healthy and delicious soup. please don’t forget to share with us if you have any other recipes . Enjoy and stay warm!
1/2 cooking pumpkin
1 leek chopped
2 tbsp olive oil
1 onion, peeled and chopped
Pinch of freshly grated nutmeg
Garlic and ginger finely chapped
chicken or vegetable stock
100ml coconut milk Sea salt and freshly ground black pepper
Add olive oil in a saucepan and fry the chopped onions,garlic, ginger and the leek. Once onion turns a little brown add the pumpkin. Let it cook for sometime on slow heat.
Then add water, coconut milk and vegetable stock follow by seasonings. Add salt and pepper to taste.
Once the pumpkin are cooked let them cool. Grind them in a blender. Reheat in the same saucepan. Serve with your favorite bread. Enjoy
